I am always looking for different ways to introduce new flavours and keep Florence’s diet as varied as possible. For us here, breakfast is a really big focal point in our day and without a good filling meal Florence just does not compute! I thought I would share with you one of Florence’s favourite breakfasts because not only is it tasty but it takes approximately 5 minutes to make!
1 slice of wholemeal bread
1/2 tsp ground cinnamon
Mash 1/2 a banana with a fork on a board – a wooden one is best. Whisk an egg in a bowl before mixing in the mashed banana. Cut your slice of bread into soldiers and dip each one into the mixture making sure there is generous covering on both sides of each one.
Spray some frylight in a non stick pan and place on a high heat. Place the sodliers into the pan and fry until golden brown before flipping them over and repeating it for the other side. This normally takes about 90 seconds each side.
Remove from the pan and leave to cool to room temperature before serving. Sprinkle a little ground cinnamon on the top for extra flavour.
