Super Speedy Slimming World Pasta Bolognese

I’ve been doing Slimming World for just over four months now and while the recent holiday period might have seen me go a little bit over the top with the Christmas chocolates I am so impressed with the results and I am really enjoying the whole process. One of the main attractions for me is the opportunities to learn a few more skills in the kitchen. Before I would never have bothered cooking recipes from scratch, it was always so much easier to reach for a jar, bung everything in the oven and not thinking about it until it’s time to eat it. However I am now a total convert and cook from scratch almost every night. I thought I would share one of my favourite recipes which is my go to easy crowd-pleasing Slimming World dinner – Syn Free Pasta Bolognese.

Speedy Syn Free Spaghetti Bolognese

Ingredients
  • 5% or less lean minced beef
  • 2 celery stalks
  • 1 medium onion
  • 1 cup mushrooms
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper,1 carrot
  • 1 tin of chopped tomatoes
  • 250g Passata
  • 100ml boiling beef stock
  • 3 tbsp tomato puree
  • frylite
  • Grated cheddar
Directions
  • Step 1 Grease a frying pan with a couple of sprays of fry lite. Add the mince to the pan along with a ground oxo cube, the chopped onion & 2 crushed garlic cloves. Leave to brown, turning frequently.
  • Step 2 Chop the peppers, celery and mushrooms and grate the carrot. Add the vegetables to the pan along with the passata, beef stock, chopped tomatoes & tomato puree, reduce the heat, cover and leave to simmer for 45 minutes stirring frequently.
  • Step 3 Serve with dried spaghetti or pasta (he b 30g).
