This weekend I’ve been busy in the kitchen making some delicious snacks and meals for Florence that we can just grab and go on busy days. One of the tasty recipes I made was these fruity Oat Cakes which are perfect for breakfasts and on the go snacks and are packed with yummy goodness! I made two different flavoured oat cakes, banana & cinnamon and raspberry & blueberry. I really wanted to make an apple (Flo’s favourite!) batch too, but we’d run out so I’m waiting for Tesco to deliver this week’s food shop before I can.
Yummy Fruity Oat Cakes
4 heaped tbsp porridge oats
4 heaped tbsp plain flour
1 1/2 cups of milk
Preheat your oven to 180 and simply mix all of these ingredients together in a bowl and then it’s time to add your flavouring. For the banana mix, mash a banana with a fork until there are no lumps. I find it’s easiest to do this on a wooden chopping board as it doesn’t stick so much to the board! Add your mashed banana to your oat mix along with 1 tsp of ground cinnamon.
For the Berry Oat Cakes mix together the base mix again and this time add 1 tsp sweetener, 1 cup of raspberries & 1 cup of blueberries. I chopped all of the berries in half for more distribution but that’s not essential!
Grease a muffin tray and spoon your mix evenly across the 12 sections. Bake in the oven at 180 for 15 minutes. Leave to cool and serve.
As I mentioned before, I made 24 in total & popped 16 in the freezer in a zip lock bag ready to defrost and serve at a later date.

*For a dairy free version of this recipe you could use almond or coconut milk.
